Prawns & Tasso Ham

20 freshwater prawns
1 cup diced Tasso ham
1 red pepper, diced
1 yellow pepper, diced
1 orange pepper, diced
2-4 shallots, sliced
1-2 tablespoons tomato chutney
1 cup chicken stock
1 cup heavy cream
2 tablespoons butter
½ cup fresh parsley, whole leaves
½ cup fresh basil, whole leaves

Sauté the ham and prawns in the butter. Add the peppers, shallots and tomato chutney. Cook one to two minutes and then add chicken stock. Add cream and reduce by half then add the fresh herb leaves and serve.

You can serve over rice or pasta. To make a casserole, place in over safe dish top with bread crumbs. Add your choice of cheeses, dot with butter and bake until golden brown.
