2012 Sammy’s Recipe
Sammy’s Seafood Chowder
Ingredients
3 lbs. shrimp
2 pts. Chopped clams
3 lbs. bay scallops
8 large potatoes
3 yellow onions
2 pints heavy whipping cream
1 gallon whole milk
2 lbs. chopped bacon
3 oz. tabasco sauce
Salt, pepper, garlic to taste
Rue
¼ gallon milk
2 cups flour (all-purpose)
Add onions, potatoes and bacon to pot with heavy cream and milk. Add seasonings and cook until halfway done. Add seafood and simmer for approximately 5 minutes. Add rue to thicken chowder. Make sure you wisk it well and use all-purpose flour. Serve once complete.
Feeds approximately 30 bowls
