McCurdy’s Oysters Rockefeller

½ cup diced Bacon
1 ½ cup diced Onion
8 cups packed spinach, wilted and drained
1/3 cup heavy cream
¾ cup shredded Asiago or Parmesan cheese plus ½ cup
1 tablespoon fresh minced garlic
pinch of salt & pepper
pinch red pepper flakes
2 dozen oysters on the half shell

Render pork, add onions & sauté until slightly translucent.  Add garlic, salt, pepper and red pepper flakes.  Add spinach and heavy cream and reduce slightly, then add cheese.  Top each ½ shell oyster with a spoonful of mixture, sprinkle with cheese, place under broiler until bubbly and brown – 1-2 minutes.  Serve with a lemon wedge.
